Semifredo is a frozen dessert that you can cook yourself. You won’t find words to describe this incredibly delicious lemon treat! According to this recipe, you can cook both lemon semifredo and orange.

You will need
- - 120 g of powdered sugar;
- - 100 ml cream;
- - 8 egg yolks;
- - 8 egg whites;
- - zest and juice from 1 lemon;
- - cognac or vodka.

Take eight large chicken eggs. Separate the yolks from the proteins. Beat the yolks with powdered sugar, add the lemon zest, grated on a fine grater, mix. Add freshly squeezed lemon juice, whisk in a water bath. The mass should become thick. A water bath is done simply: boil water in a saucepan, put a container with mass on it. Remove the container from the bath, continue whisking the mass until the bowl cools down.

Now whisk the six proteins with cream, add a little cognac or vodka. You can not add alcohol, but when frozen due to alcohol, dessert will not crystallize.

Now mix the egg yolks with the whites. Beat the two remaining proteins with a pinch of salt and add to the already prepared mixture. Mix everything gently.

Cover the form with baking paper, pour the mass into it, cover it with cling film from above. Clean for 4 hours in the freezer.

Serve the lemon semifredo chilled, you can additionally decorate with slices of fresh lemon and orange or lemon zest.

The dessert has a fresh lemon flavor - the perfect solution for a hot day. In addition, homemade semifredo is much more useful than purchased ice cream.
