Original white bean and chicken meat tomato soup is a great alternative to any family lunch or dinner. Of course, it takes some time to prepare, but the final result is worth it.

Ingredients:

  • 1 tbsp. white beans;
  • 2 l water;
  • 2 potato tubers;
  • 1 medium carrot;
  • 1 onion;
  • 2 chicken drumsticks;
  • 2 tbsp. l tomato paste;
  • ½ bunch of dill;
  • ½ bunch parsley;
  • ½ pod of dried chili;
  • 2 tbsp. l sunflower oil;
  • salt and pepper to taste.

Cooking:

  1. Rinse the beans, pour clean water and leave to stand for 3-4 hours, periodically replacing the water. During this time, the beans should swell a little and soften.
  2. Rinse chicken legs, put in a saucepan, add water and boil until cooked. Then remove the meat from the pan and transfer to a plate, leaving only the broth.
  3. Rinse the swollen beans, put in a boiling broth and cook for about 50-60 minutes.
  4. Peel and wash all vegetables. Cut the onion into thin half rings, grate the carrots on a coarse grater.
  5. Pour in the pan sunflower oil and heat it.
  6. Put half the onion rings in hot oil and fry them until golden.
  7. Then add the grated carrot to the onion and fry it until soft.
  8. Put the tomato paste in a glass, pour with ordinary water and mix thoroughly until smooth.
  9. Cooked tomato mass pour the frying of vegetables and stew it at minimum heat for a quarter of an hour. During this time, roasting will turn into either tomato sauce or tomato sauce, which at the end of cooking will need to be seasoned with salt and pepper to taste.
  10. Peel a half of chili pepper from seeds, cut into small cubes and put in a tomato frying. All mix put out a couple more minutes and turn off.
  11. Cut the potatoes into medium cubes, add to the broth to soft beans and cook until half cooked.
  12. Separate chicken meat from the bone and cut into small pieces. Finely chop dill and parsley with a knife.
  13. Then pour tomato frying into the soup and throw pieces of chicken meat.
  14. Cook the contents of the pan until all ingredients are cooked. At the end of cooking, add all the greens there, mix the soup, boil, turn it off and leave it to stand for 5-10 minutes.

Pour the infused bean soup with chicken into plates and serve with rye bread to the table.
