Rinse a piece of pork with fat under running water, put it on a paper towel so that all excess moisture is gone. Then stuff with prunes and dried apricots. If your dried fruits are very dry, then they must first be soaked for 2-3 hours in cold water.

Then sprinkle the stuffed piece of meat with pepper and salt. You can add any spices to taste. On all sides, coat with mayonnaise.

Cover the baking dish with foil. If you want, you can lay on top slices of peeled potatoes - you get meat right away with a ready-made side dish. Wrap pork tightly in foil, put in the oven for 1-1.5 hours, cook at an average temperature of 180 degrees.

Poke the meat with a knife - if transparent juice, not pink juice, flows from it, then the meat is ready. Open the foil and cook the pork for another 5-10 minutes so that it is browned.

Pork with dried apricots and prunes is best tasted hot, do not wait until it cools, immediately serve it to the table. You can decorate the top with fresh chopped herbs. Instead of potatoes, you can separately cook any other side dish to taste.
