For the preparation of homemade condensed milk, fresh cow milk is taken. Cream can be replaced in tandem with powdered milk or baby food. But it’s better to take a whole fatty product.

To make condensed milk a success, it is worth buying milk from a proven thrush. Sometimes farmers dilute it with water, mix with skim milk or add components that prevent the product from souring. Such milk is not suitable for the preparation of condensed milk.

Whole milk always has cream on top, while skim and diluted ones do not.

Having chosen high-quality raw materials, try to cook condensed milk according to the classic recipe. For every liter of whole milk you will need 500 g of sugar.

Heat the milk to body temperature (37-40 ° C) and dissolve sugar in it. Pour the sweetened product into a thick-walled saucepan, put on the stove, screwing the fire to a minimum, and cook for 2-3 hours, stirring regularly.

To check if the condensed milk is ready, simply - scoop a little milk with a spoon and drip onto your finger - if the drop does not spread, then the product is boiled.

Do not try to increase the time of preparation of condensed milk by strengthening the fire - the milk will simply burn. But if you add another 200 g of sugar for every liter of milk, it will condense much faster.

Condensed milk at home can be prepared according to a simplified recipe. You will need: whole milk - 500 ml, milk powder - 3 cups, sugar - 3 cups.

Mix whole milk with powdered milk and beat with a blender until smooth. Pour sugar and place the container with the composition in a water bath. Stew on medium heat for 1 hour, making sure that water does not get into the milk. Stir continuously until the product thickens.

Condensed milk can also be prepared without whole milk, using dried cream and butter.

For a simple recipe, take: 4 cups of dried cream, 2 cups of sugar, 50 g of butter, a glass of water.

Boil the liquid. Combine softened butter with sugar, add to water and beat with a blender. Then pour in the cream, continuing to whip.

Put a homogeneous mass in a water bath, and cook until thickened. After cool and put the condensed milk in the refrigerator - there it will thicken even more.

Another variant of homemade condensed milk: fat cream (at least 25%) - 1 liter, sugar - 1.2 kg, milk powder - 400 g, baby food - 200 g, vanillin - 2 g.

Pour sugar into a thick-walled saucepan and mix with a little water - literally to wet. Place the container on a fire and heat slightly to prevent boiling. At this stage, sugar does not need to be dissolved.

Combine the cream with warmed sugar in a separate container. Pour in baby food, milk powder, vanilla and place a saucepan in a water bath.

During the first 15 minutes it is necessary to continuously stir the ingredients with a whisk or whisk with a mixer at low speed. Then mix the mass for 5 minutes. every 10 minutes.

Boil condensed milk for at least an hour. Determine the readiness of the product by its density.
