Smoked Sausage Salad and Grilled Vegetables Salad Recipe

Ingredients:

- 200 g of Odessa or Krakow sausage;

- 200 g chopped green beans;

- 1 tomato weighing 150 g;

- 100 g (half) of red or orange bell pepper;

- 2 sheets of green salad;

- 20 g of green onions and arugula;

- 4 tbsp vegetable oil;

- salt.

If you took frozen beans, then you do not need to cook it. Put it in a pan, simmer for 15 minutes over medium heat, and then brown over high heat.

Boil the beans in salted water for 15 minutes, then transfer it to a colander. Heat 2 tbsp in a pan vegetable oil and fry the green pods in it over high heat along with cubes of bell pepper. Put the vegetables and fry the quarters of tomato in the same oil, but just a little so that they do not turn into porridge.

Peel the sausage and cut into transverse circles 1.5-2 cm thick. Tear the lettuce leaves with your hands, chop the green onions. Combine all prepared salad ingredients and arugula leaves in one bowl. Pour them with the remaining vegetable oil and sprinkle with a pinch of salt.

Salad with smoked sausage and fresh vegetables

Ingredients:

- 150 g salami;

- 2 cucumbers;

- 150 g of Chinese salad or young white cabbage;

- 1 bell pepper;

- 20 g of dill;

- 3 tablespoons sour cream;

- 1 tbsp French mustard

- a pinch of ground black pepper;

- salt.

Chop salad or cabbage finely. Strip the cucumbers, bell peppers and salami into strips. Chop the dill greens, after cutting off the thick stems. Fold everything in a salad bowl, slightly salt, remembering that there is already salt in smoked sausage. Dress with sour cream, mustard and black pepper. Beat the resulting mixture and fill it with salad. Mix everything well.

Salad with smoked sausage, beans and apple

Ingredients:

- 300 g smoked sausage with a large fat;

- 1/2 tbsp. red bean;

- 2 green apples (for example, granny smith or golden);

- 1 red onion;

- 3 tablespoons vinegar

- 3 tablespoons mayonnaise;

- salt.

In the absence of time and desire to cook dry beans, it can be replaced by canned, but the taste will change slightly.

Soak the beans in cold water for 2 hours. Fold the beans into a colander and cook them until cooked (soft). Marinate half rings of onion in vinegar for 10 minutes. Cut the sausage and apples into strips. Mix all the components of the salad, season with mayonnaise and let it brew properly. Then add salt, if necessary.
