    • dry white wine - 250 gr;
    • breadcrumbs - 50 gr;
    • cheese - 50 gr.

    • fillet of sea bass - 800 gr;
    • carrots - 100 gr;
    • celery root - 100 g;
    • fresh champignons - 300 gr;
    • vegetable oil - 80 g;
    • salt to taste;
    • pepper - to taste;
    • lemon juice - 30 gr;
    • sour cream - 4 tbsp. spoons;
    • tomato paste - 1 tbsp. a spoon.

Cook sea bass in sour cream sauce. To do this, in a large bowl, mix 125 grams of sour cream with 1 teaspoon of mustard, 50 grams of lemon juice, 1 teaspoon of chopped lemon zest and the same amount of salt and pepper. On the prepared sea bass, coat on all sides with the prepared mixture.

Coarsely chop 5 cloves of garlic and 50 grams of parsley and dill. Stuff the perch belly with the rest of the sauce mixed with herbs and garlic. Cover the baking sheet with foil, place fish on it and bake at 200 ° C until golden brown.

Cook sea bass with tomatoes. To do this, sprinkle 600 grams of fish fillet with 2 teaspoons of salt, 1 teaspoon of pepper and sprinkle with 50 grams of lemon juice. Place the perch in a deep baking dish, pre-oiled.

Coarsely chop 1 bunch of green onions and 2 cloves of garlic. Scalp 2 large tomatoes with boiling water, and then peel them and cut into cubes. Chop as small as possible 50 grams of dill. Fry onion and garlic in vegetable oil until transparent. Add tomatoes, dill to vegetables and continue simmering over low heat for about 3 minutes.

Cook sea bass with mushrooms. To do this, grate 100 grams of celery root and carrots on a coarse grater, and cut 300 grams of champignons into small cubes. Fry the mushrooms in a hot dry frying pan until the excess liquid evaporates, then add vegetable oil and vegetables. Fry everything together for 5 minutes.

Pour a little water into the pan, salt and pepper to taste, reduce heat and simmer until all ingredients are soft. Slice 800 grams of fillet of sea bass in portions, sprinkle with 30 grams of lemon juice and salt to taste.

Grease a heat-resistant baking dish with vegetable oil and place fish in it, and cover with stewed mushrooms and vegetables on top. Place the dish in the oven and bake at 180 ° C for about 20 minutes. Then remove the mold from the oven and add the mixture made from 4 tablespoons of sour cream and 1 tablespoon of tomato paste. Continue cooking for another 15 minutes.
