In Mediterranean cuisine, tapenade is actively used - pasta made from olives. It can be served with vegetables or meat, and you can also make simple sandwiches with it, for example, for breakfast or for a snack before dinner.

You will need

    • 200 g of black olives;
    • 70 g anchovies;
    • 1 tbsp capers;
    • 2-3 cloves of garlic;
    • a bunch of parsley;
    • 3-4 tbsp olive oil;
    • salt;
    • bread for toast;
    • 2 tomatoes;
    • several lettuce leaves;
    • balsamic vinegar.

Use high-quality black olives for cooking. The easiest way to buy is already those from which the bones are extracted. If possible, choose canned olives made in Greece or Italy.

Open a jar of olives, drain the liquid from them, if necessary, remove the seeds. Fold in a food processor. Wash salted anchovies in running water, dry, remove their tails. Add the fish to the olives. Put capers there. Remove parsley from the branches, and add the leaves to the remaining ingredients along with the peeled garlic cloves. Grind all the ingredients to a state of small pieces. Then pour in olive oil and mix everything again in the combine. You should get a fairly uniform paste. Try it and, if necessary, add salt.

With white bread, better than special, for toast, cut the crust. Between each pair of slices lay a thick layer of tapenade. Melt the butter in a pan. Fry the sandwich on both sides for 3-4 minutes to get a golden crust. On top of the finished sandwich, put a slice of tomato, lettuce and add a few drops of balsamic vinegar. Serve warm.

If you don't like butter-fried bread, use a waffle iron to make this sandwich. It will be more suitable than a toaster, since bread can already be fried with olive paste inside.

If desired, use a different tapenade prescription. For example, a teaspoon of cognac is added to it in France. Also, in rare cases, this paste is made from green olives, but then a few drops of lemon juice are added to them. There are recipes for tapenade with tuna instead of anchovies. In some cases, fish are generally replaced with an equal amount of baked eggplant.
