  • - flour - 200 grams plus an additional amount for powder form,

  • - butter (softened) - 120 grams plus an additional amount for lubricating the form,

  • - icing sugar - 50 grams,

  • - one yolk,

  • - a pinch of salt.
  • For filling:

  • - quark cheese - 500 grams,

  • - eggs - 4 pcs.,

  • - sugar - 160 grams,

  • - one lemon

  • - butter (softened) - 100 grams,

  • - flour - 50 grams,

  • - jam from strawberries, red currants or orange.

Sift the flour onto a clean table in the shape of a slide and make a recess in the center.

We place in the recess softened butter (120 grams).

Also add the icing sugar, yolk and a pinch of salt and start kneading the dough.

We roll the ball from the dough and wrap it in a cling film. We put it in the freezer for one hour.

After an hour, roll out the dough with a rolling pin to a thickness of half a centimeter.

Lubricate the mold with oil and sprinkle with flour. We spread the dough on the bottom of the form and make punctures with a fork so that the dough does not swell.

Put the mold in the oven and bake for 10 minutes at 180 degrees. We do not bring it to full readiness, because a little later the dough will again need to be put in the oven.

Wipe 500 grams of quark cheese through a sieve so that there are no lumps. We shift the cheese into a large cup.

In 4 eggs, we separate the whites from the yolks and set the whites aside. Add the yolks and half sugar (80 grams) to the quark cheese. Mix.

My lemon and three zest on a fine grater. Add the lemon zest to the cheese mass.

Add 100 grams of softened butter and 50 grams of sifted flour. Mix until smooth.

Beat the proteins with a mixer at medium speed.

When the protein mass increases in size, add the remaining sugar (80 grams) and continue to whisk until the meringue is consistent.

Gently add the meringues, stirring, into the cheese mass.

When all the ingredients are mixed, pour the cheese filling into the mold on top of the prepared base.

Bake in the oven for 45 minutes at a temperature of 150 degrees. We take out the cake pan from the oven and cool.

Serve and serve with jam.

Useful advice

Quark cheese can be replaced with ricotta or another type of cottage cheese. If lumps appear, pound them so that the dough for the pie is not dense. You can diversify the taste of the filling by adding raisins, blueberries, red currants or walnuts.
