Boil or bake beets until cooked. Keep in mind that the beets are cooked long enough, so prepare it in advance! Then peel and cut into a medium cube.

Wash the orange thoroughly, preferably with a brush. In general, if there is such an opportunity, give preference to organic fruits that do not cover with a layer of wax. Then carefully, using a peeler or grater, remove the zest from the orange. If you used a peeler, cut the zest into strips.

Squeeze the juice from the orange itself.

Chop the onion into a small cube. In a thick-walled pan, heat a mixture of olive oil and water and put onion cubes and half the whole zest there. Cook until soft.
