You will need
- For 3 servings:
- - 200 g of pearl barley;
- - 1/2 large sweet red pepper;
- - 1/2 large sweet yellow pepper;
- - 1 small red onion;
- - 1 cucumber;
- - 1 tomato;
- - olive oil for dressing;
- - 1.5 tbsp balsamic vinegar;
- - salt and freshly ground black pepper to taste.

Rinse the pearl barley and boil what is called a “clove”. To do this, just slightly reduce the cooking time indicated on the package, but in any case, try it!

Drain the prepared barley water and let it cool to room temperature.

While the barley is cooling, wash and dry all the vegetables on a towel. Peel seeds and cut into small cubes. Also chop the cucumbers with tomatoes and onions. Try to cut as finely as possible!

Mix all the vegetables with cereals, salt and pepper to taste, add a little olive oil and balsamic vinegar. This salad is especially valuable in that it can be prepared in the morning and taken with you to work: it will absolutely not lose its amazing taste!
