To prepare the protein glaze, mash the white egg (do not whisk) the egg white with powdered sugar. Squeeze the juice from the lemon. Add the juice a little to the protein crushed with sugar.

Both types of glaze can be applied to baking in an even layer with a spatula or knife. If the glaze quickly thickens and it is not possible to apply it evenly, melt it slightly.

White glazes can be tinted with natural dyes at will. Yellow - from lemon zest, orange or carrot juice. Green is obtained from spinach leaves, brown from strong coffee, red and pink from cherry juice, strawberries, raspberries or beets.

Protein glaze can be glossed if the product is slightly browned in the oven. This applies to baking without butter cream;
On a white glaze, you can pour colored sprinkles of sugar for decoration.
