Risotto is one of the most popular Italian dishes in the world and at home. It can be prepared in different ways, but rice with seafood, for example, with squid, is especially tasty. For greater saturation, add vegetables and herbs to the dish.

You will need

    • 1 chicken leg;
    • parsley root;
    • Bay leaf;
    • 2 onions;
    • 200 g of rice;
    • 200 g squid;
    • 1/2 tbsp. white wine;
    • 500 g of tomatoes;
    • 2-3 cloves of garlic;
    • 1 tbsp butter;
    • vegetable oil;
    • thyme and basil;
    • salt and pepper.

Cook the rice stew. To do this, put in a pan with cold water a ham and onion, peeled and cut in half. You can also add bay leaf, parsley root and a few peas of black pepper. Boil the broth for 40 minutes, periodically removing the foam. In the middle of cooking, add salt. Strain the prepared liquid so that the broth becomes transparent. Set aside chicken - it will come in handy for another dish.

Peel the onion and chop finely. Put in a pan with warmed vegetable oil and fry for 3-4 minutes. Rice, the best sort of arborio, rinse in several waters and pour to the onion. Sauté it until golden brown, stirring occasionally. The main thing is that the rice does not turn brown. Pour the wine into the mixture and simmer for 4-5 minutes. Then add a glass of broth to the pan. Boil the rice in it until the grains are soft. Add more broth if necessary. For flavor add fresh or dried basil and thyme.

Scald tomatoes with boiling water, peel them and cut them. Boil squids in boiling salted water for 5 minutes, then cut into rings. Peel and chop the garlic. Put vegetables and squid rings to the rice. Cook together for another 5-7 minutes. Try the rice and add salt if necessary. Also, a couple of minutes before the end of cooking, you can fill it with a tablespoon of butter.

Serve the risotto hot. It does not require any additives, with the exception of a glass of light white wine, preferably dry.

If you wish, you can change the recipe a little. To make the risotto more spicy, add a little finely chopped hot pepper to it. However, do not overdo it. Excessive sharpness of the dish eliminates its taste nuances - tenderness of squid and spicy taste of herbs. As a complement to squid, you can put shrimp and mussels, which also need to be boiled beforehand.
