You will need

  • Poi (mashed taro root) pre-frozen - 1/4 cup,

  • egg - 2 pcs.,

  • milk - 1 cup

  • sifted wheat flour - about 320 grams,

  • sugar - 1 tbsp. a spoon,

  • baking powder - 4 teaspoons,

  • some salt

  • coconut syrup.

Defrost the poi with a small amount of water in the microwave. Freezing is needed to prevent fermentation.

Beat eggs in a large bowl.

Melt a little butter and a glass of milk in a saucepan. Cool slightly and introduce milk into pre-beaten eggs.

We take another bowl and mix in it 320 grams of flour, four teaspoons (without top) of baking powder, a tablespoon of sugar and a little salt (to taste). Add eggs to the flour mixture and mix well, but do not interfere for long.

Add poi to the flour mixture. Poi must be added before baking. Poi gives pancakes softness and tenderness, but do not add it to the dough too much, so that future pancakes do not turn out grubby.

Preheat a crepe maker or a frying pan and spread the dough, fry until golden. We fry in the same way as ordinary pancakes.

Ready pancakes are sprinkled with coconut syrup, which can be replaced with any other syrup. Personally, I liked strawberry and peach. Serve with warm herbal tea.
