  • - 350 g sugar

  • - 2 large eggs

  • - 2 yolks

  • - 1 teaspoon vanilla extract

  • - 2 teaspoons of baking powder

  • - 1 teaspoon of salt

  • - 2 1/2 cups flour

  • - 1 cup of buttermilk

  • For cream:

  • - 2 egg whites

  • - 2/3 cup sugar

  • - 1-2 drops of lemon juice

  • - 1 teaspoon vanilla extract

Heat the oven to 170 C. To make such a cake, you will need a round ribbed baking dish with a hole. Lubricate it generously with oil.

In a large bowl, beat the butter and sugar until light and fluffy foam. Gradually add eggs and then yolks. Add vanilla extract. Then - salt, baking powder and mix quickly. Next, add about 1/3 flour and half buttermilk, mix again. Add 1/3 of the flour, the remaining buttermilk, and then the remaining flour.

Put the dough in the prepared form, trying to squeeze it so that the top is smooth.

Bake in the oven for 40-45 minutes, or until a toothpick inserted into the center of the cake is dry. Then let cool.

When the cupcake has completely cooled, turn it over. Align its surface slightly with a notched knife. Then, using a small round spoon, cut out small round holes, being careful not to touch the top and sides of the cake.

Prepare the protein cream in a water bath in a bowl by mixing egg whites, sugar and lemon juice. Cook for about 3 minutes until the sugar has dissolved. Remove the bowl from boiling water and beat the mixture with a mixer at low speed, gradually increasing it to maximum until foam is obtained. Next, add the vanilla extract and mix.
