There are several ways to cook beef. Baking at low temperatures is considered the most successful of them, the dish as a result is possible even for beginners of cooking. Of course, you have to spend a little more time, but at the same time the meat is baked evenly and at the same time does not dry out.

First you will need to prepare the beef for baking. Rinse a piece of tenderloin under running water, pat it well with a kitchen towel. Use a sharp knife to make a cross-shaped notch of the fat layer on the fillet. At the same time, try not to damage the meat itself to avoid leakage of meat juice during cooking.

Take prepared spicy herbs. Depending on preferences and season, this can be oregano, tarragon, rosemary, parsley and others. Coarsely chop the greens, put them in a cup, and fill with a neutral taste of vegetable oil. In the same cup, send the squeezed garlic and mustard, salt, pepper.

Rub the meat well with the resulting mixture, leave it for several hours. The longer the beef is pickled, the tastier it will turn out. Therefore, it can be held in the marinade for a day or even two. Do not forget only in this case, put the meat in the refrigerator.

Remove the beef from the refrigerator. Dissolve melted butter in a pan, heat it, fry the meat from all sides until golden brown.

Take the baking dish. Transfer the prepared piece to it, pour the remaining marinade on top, after which the meat can be sent to the oven with a temperature of 80 ° C. Calculate the cooking time based on the formula: one hour for every 500 grams of meat, plus another half hour for the piece itself. Thus, it takes 2.5 hours to bring the kilogram fillet to readiness.

Cut the cooked beef into thin slices across the fibers and serve. As a side dish, baked potatoes and vegetables, any salad are perfect for it.

If you have a special meat thermometer, you can determine readiness with it. The dish can be taken out of the oven if the temperature inside the fillet has reached 60 ° C.
