Chicken is a popular ingredient in many cooking recipes. Both her first and second courses are prepared from her meat. For young housewives who do not yet have sufficient experience, the question of how to determine the readiness of chicken is quite relevant. When baked in the oven, the chicken skin becomes fried quickly enough, but inside the meat may still be damp.

  • - fork, toothpick or culinary needle;

  • - twine.

Instruction manual

1

In many ways, the cooking time of the chicken depends on its age and size. Chickens and young hens who are under the age of one and a half years, cook much faster. If you cook broth from them, cut the meat into pieces beforehand. In this case, for the rich broth, it will be enough for you that the meat is cooked over low heat for no more than an hour. Old chicken will need to be cooked for at least 2-2.5 hours, so that it boils and becomes softer. Readiness can be determined by eye - the meat at the ends of the legs will begin to move away from the bones.

2

To determine the readiness of the chicken, which is fried whole on a grill or pan, you can pierce it in several places with a toothpick, fork or culinary needle. Make deep punctures in the area of the thick edge of the chicken breast and in large bones. If the meat is ready, the fork will enter it effortlessly, and from the puncture it will begin to stand out not the sacrum, but the transparent meat juice. Chicken, sliced into portioned pieces, will fry one and a half times faster than the one that you will cook whole or spread out in a pan.

3

If you decide to bake the whole chicken in the oven, be sure to dress it with twine so that your legs and wings are firmly pressed to the carcass and not burned. Monitor the cooking process using a special meat baking thermometer. It can be bought at hardware stores. Pierce them with a carcass in the chest area. At an internal meat temperature of 85 degrees Celsius, the chicken is considered finished.

4

In the absence of a thermometer, the same fork or toothpick will come to your aid. Make a puncture and look at the flowing juice. It should be transparent and bright.

5

Calculate the cooking time of chicken, baked at a temperature of 180-200 degrees in the oven. For it to be completely fried, for every kilogram of its weight you will need 40 minutes.

note

Please note that when baking in the oven, the chicken skin may be browned before the meat is cooked. Use foil, which can be removed about 15 minutes before removing the bird from the oven. In this case, the skin will not burn, but it will brown, and the meat will be baked.

Useful advice

To make chicken meat cooked evenly, use special dishes with thick walls, the so-called ceramic or cast-iron "goose makers", glass or metal baking dishes.
