Azu is considered a national Tatar dish. This is a stew of beef or lamb. The main components of the dish are tomato sauce and pickles. Azu is very simple to prepare, it is satisfying and has a pleasant aroma and a slightly sour taste.

    • 700 g of beef;
    • 4 pickled cucumbers;
    • 4 tomatoes;
    • 2 heads of onions;
    • 6 potatoes;
    • 2 cloves of garlic;
    • 2 tbsp. tablespoons of flour;
    • greens;
    • salt;
    • pepper;
    • vegetable oil.

Take the pulp of the back leg, clean it of the films. Rinse well under cold running water, dry with a paper towel. Cut the meat across the fibers into 1 cm thick and 3 cm long slices. Heat the pan, pour vegetable oil and fry the slices. The meat should have a golden color. Fry until the meat turns gray and juice stands out from it. Transfer the pieces into a deep pan.

Peel onions, cut into thin half rings and fry in a pan with vegetable oil. Add the flour to it and all together continue to fry until brown.

Wash tomatoes, pour boiling water over them, cool. Remove skin from them and cut into cubes. Put the tomatoes in the fried onions.

Divide the garlic into slices, peel and chop finely. You can use a special tool, or rub it on a fine grater. Add chopped garlic to sauteed vegetables, pour a little water. Cover the pan with a lid and simmer for 10 minutes over low heat. Tomato sauce is ready. It must have a tangy taste.

Take pickles, dry and peel them from rough skin and seeds. If the cucumbers are small, then the seeds can be left out. Cut them into small cubes.

Wash the potatoes, peel and cut into 4 cm long cubes. Fry separately in a pan with vegetable oil.

Take the dill and parsley, sort and rinse under cold water. Finely chop. Add the prepared pickles to the meat. Put the fried potatoes, mix everything carefully and continue to stew the meat with vegetables.

Pour in tomato sauce. Add salt and pepper to taste. Continue to simmer the basics over low heat with the lid closed. See that the water does not boil away; if necessary, top it up. 5 minutes before the end of the stew, add chopped greens to the dish. Serve hot on a serving plate.

Useful advice

When cooking, do not use cucumbers pickled in vinegar, the taste of the dish will be very sour. Instead of tomatoes, you can take tomato puree.
