  • 1 cup milk

  • 1/2 tsp dry yeast or 5 grams fresh;

  • 3 cups flour;

  • 1 egg

  • 250 gr butter;

  • Salt to taste.
  • For cream:

  • 1 cup of sugar;

  • 1 egg

  • 3 tbsp. l potato starch;

  • 2 cups of milk;

  • A pinch of vanillin.

To prepare the cream, grind the egg with starch and sugar until a thick white mass is obtained, then dilute this mixture with warm milk and, putting on a small fire, bring to a boil, stirring constantly.

Dissolve dry or fresh yeast in warm milk and add the egg, flour and salt, then knead the dough. Divide the dough into two parts and roll each part into a layer. Lubricate the layers with soft butter. Roll each layer into a roll and twist into a "snail". Pack both snails in plastic wrap and place in the refrigerator for about three hours.

When the "snails" infuse, you can take on a cream that has cooled to a warm state. In the original, this cream is called magalabia. Remove the dough from the refrigerator and roll it again into two layers. The thickness of each layer should be no more than 3 mm. Put one layer of dough on a baking sheet covered with parchment, cover the layer with cream on top, smooth and cover with a second layer, so that the edges can be tucked in two centimeters. Prick the top layer in several places. Grease the cake with yolk, whipped with a little milk and put in the preheated oven for half an hour. The baking temperature should be 180 degrees.

When the cake has a beautiful ruddy color, remove it from the oven and sprinkle with powdered sugar.
