Peel the almonds, dry them in a skillet without adding oil, and then grind in a blender until fine crumbs. Boil the egg yolks and wipe them through a fine sieve.

Knead the dough from almond crumbs, butter, flour, 120 g of powdered sugar and boiled yolk. Get shortcrust pastry for the cake. Divide it into 4-5 parts, cover with cling film and clean for 30-60 minutes to cool in the refrigerator.

Roll a 3-5 mm thick crust between two sheets of parchment. Bake the cake for 12-15 minutes at a temperature in the oven of 170 degrees. The cake should turn golden. So bake 4-5 cake layers, cool them.

Prepare a cream for the cake: beat egg whites with 100 g of icing sugar until strong peaks form. Add apricot jam, whisk until fluffy homogeneous cream.

Cream finished cakes with cream. The thickness of the cream should be equal to the thickness of the cake. Smear the cream and the top and sides of the cake. Garnish with almonds and apricots as you like. Cake "Cracow" is ready.

Useful advice

You can cover the top of the cake with delicious apricot icing. To do this, wipe through a sieve 100 ml of apricot jam, mix with 200 g of powdered sugar and 1 tablespoon of lemon juice.
