Watermelon is one of the most desired treats on hot summer days. But after you enjoy its juicy cool flesh, do not rush to throw away the crusts. You can make delicious jam from them, which your household, relatives and friends will certainly appreciate.

You will need

    • watermelon peels - 1 kg;
    • granulated sugar - 1.2 kg;
    • soda - 1 tsp

With watermelon peels, cut off the outer layer of a dense peel. Rinse the peeled peels thoroughly, then cut into small strips or medium sized cubes.

Prepare a soda solution, for this 1 tsp. dilute soda in 1200 ml of warm boiled water. Lightly chop the cubes with a sharp fork, and then place them in a container with the prepared solution. Mix slices of crusts well and leave in soda solution for 3-4 hours.

Drain the solution, thoroughly rinse the watermelon peels in several shifts of water or in a colander under a strong stream. Do not spare time, remember that the more completely soda is removed, the tastier the jam will be.

Place the washed peels in boiling sugar syrup made from 600 g of granulated sugar and approximately 750 ml of water. Stir, reduce heat to medium and simmer for about 20 minutes, stirring occasionally. Then add the same amount of sugar (600 g) to the jam being prepared, stir well, bring to a boil again and cook for another 20 minutes. If you like thick jam, you can increase the cooking time at this stage to 30 minutes.

Turn off the heat, leave the jam to cool for 8-12 hours. Then heat it again, bring it to a boil and cook for 20 to 30 minutes on low heat, depending on the desired consistency of the final product. Remove the jam container from the heat and after 12 hours exposure, place in sterilized glass jars, close with plastic or metal sterilized lids. The jam is done. It should be stored in a dark, preferably cool place.

Some housewives add lemon juice, cinnamon powder, vanilla sugar or citrus zest to the prepared watermelon peel jam. They claim that the jam from this is even better.
