Tiramisu is the youngest classic Italian dessert. This recipe first appeared on record in the 80s of the last century. The name, which should be translated as "cheer up", very accurately reflects the action that a mixture of strong coffee and sweet cream with a little alcohol should have.

Tiramisu Phased Recipe

The classic tiramisu differs from all other versions of the popular dessert in that the recipe necessarily uses natural coffee, cream on egg yolks and dessert Sicilian wine Marsala, sweet and strong.

You will need:

  • 4 egg yolks;

  • ½ tbsp granulated sugar;

  • ½ cup marsala wine;

  • 500 g of mascarpone;

  • 1 tbsp. cream with a fat content of at least 30%;

  • 2 cups of strong espresso coffee;

  • 3 tbsp. spoons of brandy;

  • 3 tbsp. tablespoons of powdered sugar;

  • 48 pieces of savoyardi cookies;

  • 2 teaspoons of natural cocoa powder.

Put the egg yolks together with sugar and wine in a large metal bowl and place in a container of boiling water, standing on a fire. Beat the mixture with a mixer, stop when the mixture doubles in volume and becomes thick and pale. Cooking takes about 5 minutes. Remove from heat and add the mascarpone and whisk again. Whip the cream to hard peaks and carefully, using a silicone spatula, add to the egg cream. Do not mix, but add up the mass in order to maintain airiness.

In a wide, but not deep plate, whisk cognac, espresso and icing sugar with a whisk. Dip the Savoyardi cookies in the liquid one at a time and put them in a single layer into a mold measuring 20 by 25 centimeters. Once the layer is finished, put half the cream on it, then put the remaining cookies and cover with cream again. Sift cocoa powder for dessert through a fine sieve and put the tiramisu in the refrigerator for at least 8 hours. Before serving, cut the dessert into portions.

Homemade Tiramisu Recipe with Irish Liquor

This step-by-step tiramisu recipe is different in that it uses the famous Baileys Irish liquor. The creamy and coffee taste of this drink turns an ordinary Italian dessert into an original one.

You will need:

  • 400 g Savoyardi cookies;

  • 250 ml Baileys liquor;

  • 300 ml strong black coffee;

  • 2 large chicken eggs;

  • 75 g of granulated sugar;

  • 500 g of mascarpone;

  • 30 g of natural dark chocolate.

Mix strong black coffee with 175 ml of Irish liquor. Dip the cookies one at a time into the mixture. Do not keep the savoyard in the liquid for long, as this light, dry, spongy cookie absorbs coffee and liquor mixture very quickly and can soak. Spread Savoyards in a square shape with a side of 20-22 cm.

Take the eggs and separate the protein from the yolk. Whisk the whites with sugar in a thick, pale yellow mass, add the remaining liquor and mascarpone and whisk again. Take the egg whites and also beat them with a mixer until the stubborn peaks. Combine the whites with the yolk cream using a cooking spatula. Put half the cream in the mold.

Dip the remaining Savoyardi in a mixture of coffee and liquor, put on top of the cream in one layer. Spread the light cream over the cookies again and put the dessert in the refrigerator overnight. Grate the dark chocolate on a medium grater and sprinkle crumbs on the dessert before serving.
