Ingredients for Meat:
0.8 kg of pork ribs.
Ingredients for Marinade:
- 750 g pickled tomatoes;
- 200 g of white onion;
- ½ tsp vinegar
- salt and black pepper.
Sauce Ingredients:
- 270 g of frozen currant berries;
- ¼ tsp black pepper;
- 2 cloves of garlic;
- ½ tsp Sahara;
- 4 tsp salts;
- greenery of cockerel and dill in a ratio of 1: 1.
Cooking:
- Wash the onions, peel and cut into rings and disassemble into smaller rings.
- Gently peel the skin from the pickled tomatoes with your hands.
- Put the peeled tomato pulp into a blender and grind to a puree condition. Add onion rings, vinegar essence, pepper and salt to it. Mix everything thoroughly until smooth. This tomato mass will be a marinade for pork ribs.
- Rinse, dry, chop and chop the pork ribs so that each piece contains 2-5 ribs (10 cm long).
- Dip all the ribs in a tomato marinade and leave to marinate for at least 3-4 hours.
- In the meantime, you can cook a spicy blackcurrant sauce that perfectly complements the fried ribs. To do this, defrost the currants and put in a blender, draining all excess liquid. Stir in mashed potatoes and pour into a bowl.
- Peel the garlic, grate and put in the berry puree.
- Rinse greens, shake, put in a blender, chop and pour to the currant with garlic.
- Fill the berry mass at your discretion with sugar, salt and pepper, mix well and send to the refrigerator.
- Remove the pickled ribs from the marinade, peel the onion a little with your hands and put on the wire rack. Fry on the grill until cooked, periodically turning the grill and maintaining moderate heat.
- Put the prepared pork ribs on a dish, garnish with basil and parsley, serve with berry sauce and fresh vegetables.
