We offer to cook an unusual dish called Bossam (보쌈). Boss is a dish of Korean cuisine, prepared from pork belly. Bossam translates as “wrapped, wrap, ” because they eat pieces of meat by hand, wrapping them in lettuce, Beijing cabbage, kimchi, flavored with soya paste, soya sauce or shrimp paste.   • • Instant coffee - 1 tsp.

  • • Water - 8 glasses (approximate amount)

  • • Brown sugar - 2 tbsp. l

First you need to prepare the meat: wash it under running water, dry a little with a paper towel. If the brisket has small bones, then they need to be carefully cut in, being careful not to damage the structure of the meat.

Prepare the vegetables. To do this, peel the onions and cut it into 2-4 parts. Peel the cloves of garlic from husks and films. Ginger root must be peeled and cut into slices.

They put meat, onions, garlic cloves, ginger in a pan, and also sprinkle coffee, brown sugar, soya paste or soya sauce. Top up with water. Water should cover the meat completely. The pan is put on fire and boiled for 1-1.5 hours until cooked over medium heat.

Put the cooked brisket into a dish, dry a little with a paper towel and cut thinly into slices. Serve bosses with leaves of Chinese cabbage, radish or radish salad and spicy sauce, for example, Samjan.

The dish can be served both cold and hot. Keep refrigerated.

Useful advice

• Twenjan soya paste is a by-product of making soya sauce; it is used very often in Korean cuisine. You can buy Twenjan in a specialized store of Korean or Chinese goods. You can replace the pasta in the dish with soy sauce and salt.
