It is also worth noting that eggplant requires special preparation for heat treatment, as some vegetables have a peculiarity to be bitter. It is not difficult to remove the bitterness from the fruit, but it takes time. For example, if you need to bake vegetables, cut into slices, then slices should first be sprinkled with salt, soak for 30-40 minutes, then rinse in cold water. Whole fruits, however, need a 12-hour soaking in saline solution (a tablespoon of salt per liter of water).
