You will need

- - 800 g of cottage cheese;
- - 300 g of chocolate chip cookies;
- - 100 g of dark chocolate;
- - 60 g of butter;
- - 20 g of instant coffee;
- - 3 eggs;
- - 2 tbsp. tablespoons of corn starch;
- - 1/2 teaspoon of vanilla extract.

Grind chocolate cookies in a blender bowl, add melted butter, turn on the blender for a couple of seconds - you get wet crumbs. Cover the baking dish with baking paper, spread the cookie crumbs on the bottom of the dish, and compact well.

Prepare the filling: grind cottage cheese with sugar in a blender bowl until smooth, add eggs one at a time, after each whipping. Next, send the vanilla extract with corn starch. Turn on the blender again for a few seconds, you should have a smooth mass without lumps. Separate 1/3 of the mass.

Melt the dark chocolate in a water bath or in a microwave oven, add it to 2/3 of the curd mass, add instant coffee there, grind until smooth and homogeneous.

Put the chocolate mass in the prepared form on top of the cookie crumbs. Lay out the white curd mass on top. Put the mold in the oven, heated to a temperature of 180 degrees.

Be sure to place a container of water on the lower shelf of the oven! Bake a chocolate and coffee cheesecake for about 1 hour. After that, put the cheesecake all night in the refrigerator, and in the morning serve breakfast with a cup of coffee, tea or a glass of milk.
