In a hot frying pan, fry the chopped onion and garlic. As soon as the onion is browned, add finely chopped eggplant and tomatoes to the contents. It is better to peel the eggplant first and remove the seeds.

Gradually, in the process of cooking, add the pine nuts, herbs, cilantro and chili peppers to the resulting mass. All ingredients must be stewed until cooked.

For further preparation of eggplant charlotte, you will need a baking dish. It must be lightly greased with oil, and then put shortcrust pastry on it. This must be done in such a way that the edges of the dough "hang" beyond the edges of the form.
