Holiday salad with red fish and caviar

The recipe for this salad is consistent with the level of the restaurant or good cooking, however, it is enough to simply cook such a snack at home, for example, for the holiday of March 8.

You will need:

- 1 ripe avocado;

- 2 eggs;

- 1/2 tbsp. olive oil;

- 1 tbsp Dijon mustard;

- 200 g of small shrimp;

- 2-3 pickled cucumbers;

- a bunch of dill;

- a few leaves of green salad;

- 150 g of smoked red fish, for example, trout;

- 100 g of red caviar of salmon fish;

- 1 lemon;

- vinegar;

- salt and freshly ground black pepper.

Seafood lovers can add squid fillet or finely chopped octopus meat to this salad.

Peel the avocado, remove the stone and cut the pulp into cubes. Grind pickled cucumbers, wash and chop greens. Boil shrimps in boiling water for no more than 5 minutes, otherwise they will become stiff. After that, clear them of the shells, remove the heads and tails, and cut the flesh. Break the eggs, separate the whites from the yolks. Boil the proteins in boiling salted water with vinegar. Grind the cooked proteins. Combine avocados, egg whites, shrimp and greens.

Prepare the sauce separately. Beat the egg yolks with mustard, and then gradually pour the olive oil into the mixture. Add some salt and juice squeezed from a quarter of a lemon. Beat the sauce until it turns white and smooth. Add shrimp and other ingredients to this sauce. Wash lettuce leaves and dry. Cut red fish into thin plastics. The salad will be served in portions: on each plate put a sheet of green salad, on top - a portion of shrimp salad. Add a little freshly ground pepper. Next to the plate, place 1-2 plastic red fish. Garnish the salad with 1-2 tbsp. red caviar. Also, for each serving of salad, you can serve a slice of lemon.
