You will need
- -¾ cup unsalted butter, softened
- 1/2 cup agave syrup
- -2 eggs, 1 egg divided
- -1 tsp vanilla
- -¼ cup low-fat sour cream
- -1 tablespoon of water
- -1/3 cup almond flour + 1/3 cup extra
- -1 cup rice flour
- ½ cup soy flour
- ½ teaspoon of salt
- ½ teaspoon cinnamon
- ½ teaspoon baking soda
- -½ cup chopped walnuts
- -½ cup raspberry jam

Preheat the oven to 350 degrees and place a baking sheet with parchment paper.

In a large bowl, combine the dry ingredients (almond flour, rice flour, soy flour, salt, cinnamon and baking soda). Mix well and set aside.

Combine the agave oil and syrup in a blender. Then add 1 egg and 1 yolk (save egg white for later) and beat for 20 seconds after each addition. Add vanilla and sour cream. Mix well.

Add the contents from the mixer to the bowl of dry ingredients. Form the dough, it should be sticky.

In a bowl, beat 1 egg white and 1 tablespoon of water. Form cookies and roll them in walnuts with almond flour. Cover the baking tray with parchment paper. After you place the cookies on a baking sheet, slightly push the middle of each cookie (this will be the place for your jam).

Bake for 10-15 minutes until the cookies turn golden.
