Classic Madeleine cookies according to the recipe of Julia Vysotskaya

Ingredients:

- 2 chicken eggs;

- 3 tablespoons oat bran of any brand;

- 2 tbsp flour;

- 0.5 tsp baking powder;

- 1 lemon;

- 6 tbsp powdered sugar;

- vegetable oil.

Grind bran in a mortar or using a submersible blender, combine the resulting powder with flour and baking powder and mix well. Rub the zest with lemon on a fine grater, cut it in half and squeeze the juice from one half. Beat eggs with 5 tbsp. powdered sugar with a whisk or mixer until a lush air mass is obtained. Throw the zest there, pour in the citrus juice and whisk again.

If the eggs are not beaten well, then they are not cooled enough. Place the egg bowl in the refrigerator briefly or place pieces of ice under it.

Preheat the oven to 180oC. Pour the bran flour into the prepared base for the cookies and knead everything thoroughly. Lubricate the Madeleine special baking dish with vegetable oil and fill it with dough. Or just make a flat baking sheet, cover it with parchment paper and pour the batter in the form of small diameter flat cakes at a distance of 2 cm from each other. Put in the oven for 10 minutes, transfer the finished cookies to a dish or tray and sprinkle the remaining powdered sugar through a fine sieve.
