Sail fish gained its "ship" naming due to its high and long dorsal fin. When it opens, it becomes like a sail. Only warm waters are the halo of the sailing vessel’s habitat, which is why the fish meat is completely non-greasy and has a soft delicate taste.

You will need
- - 1 kg of fillet meat of "sailing" fish;
- - 9 pcs of lime citrus;
- - 200 g of fresh tomato (1 pc possible);
- - 0.5 tsp sea salt;
- - 1 tsp freshly ground red pepper;
- - 2 cloves of garlic;
- - 2 pcs jalapinha peppers;
- - 3 pcs green onions;
- - 2 tbsp. l sesame oil;
- - ¼ bunch of green cilantro.
Instruction manual

Cut fresh fish (you can take the finished fillet). Then cut the fish fillet into small squares the size of 1 * 1 cm.

Marinate the cut fillet as follows: pour the pieces of the “sailing” fish with freshly squeezed lime juice and refrigerate for a short period (6-8 hours is enough), stir from time to time.

After 6-8 hours, remove the fish meat and drain the marinade, while slightly squeezing the pieces with your hand.

Add the remaining components to the fish products, but before that chop the garlic, chop the jalapinha pepper, green onion, tomato and finely chop the cilantro.

After cooking, give the fish a little infusion in the refrigerator. Serve the fish chilled.
