Ingredients:

  • 85 g of cow butter;
  • 2 chicken eggs;
  • 1 pinch of vanillin;
  • ½ teaspoon of baking soda;
  • 1 pinch of ginger;
  • 120 g of cottage cheese;
  • 250 ml of kefir;
  • 100 g of granulated sugar and coconut;
  • 400 g of pumpkin pulp;
  • 220 g of wheat flour.

Cooking:

  1. Wash the pumpkin thoroughly and remove the seeds as well as the peel. The remaining pulp must be cut into small pieces and put them in a saucepan. Then a little water is poured into the same container and the pumpkin is placed on the stove.
  2. After the pumpkin becomes soft enough, the pan is removed from the stove, and the liquid is drained. If desired, the pumpkin can be prepared in the oven. Bake it should be the same, until soft.
  3. In order to prepare the dough, you need to break the eggs into a sufficiently deep bowl and add vanilla and granulated sugar there. The resulting mixture should be slightly beaten with an ordinary fork or whisk.
  4. Then, softened cow butter is laid out in the dough and coconut flakes, as well as ginger, are poured. Kefir is poured into the dough in a thin stream, after which the mass is thoroughly, and most importantly, quickly mixed.
  5. Then ½ part of the previously sifted flour is poured into the dough. Using a spoon, the mixture should be gently mixed so that the dough does not lose its airiness.
  6. Warm pumpkin must be put in a blender and mashed from it. Sugar is poured into the pumpkin mass (to taste) and the curd is laid out, previously passed through a meat grinder or mashed. All mix.
  7. Prepare a baking dish, for this it should be thoroughly greased with oil or covered with baking paper. Then the dough is carefully poured, and on top an even layer is covered with pumpkin-curd mass. It can be done differently. Mix the dough with pumpkin and cottage cheese, and then shift everything into a mold.
  8. Then you need to put the pie in a preheated oven. After about 30 minutes, he will be ready. To check the readiness of the test, you can use a match or a toothpick.
