You will need

  • - salmon fillet on the skin - 800 g;

  • - cream with a fat content of 23% - 250 ml;

  • - onion - 2 pcs;

  • - dry white wine - 200 ml;

  • - zucchini - 3 pcs;

  • - sun-dried tomatoes in oil - 150 g;

  • - capers - 100 g;

  • - salt;

  • - white pepper.

So, the fish must be cut into pieces no more than 3 centimeters thick. Cut the resulting pieces along so that they can be opened like a book, that is, before reaching the edge a couple of centimeters.

Now heat the oven to a temperature of 130 degrees. While it is heating, put a sheet of parchment on a baking sheet, and fish, respectively, on it. Sprinkle salmon fillet with white pepper, salt, and also oil with sun-dried tomatoes. Place the pan in the preheated oven for half an hour. After the time has passed, remove the baked fish and cover it with foil on top.

Next, you need to prepare a creamy sauce. To do this, chop and fry the onions in a pan for 4 minutes. Then pour white wine to the onion and evaporate it until the volume of the future sauce is reduced to 1/3. After the wine has evaporated, add the cream. Warm the resulting mixture for another 2-3 minutes, add salt and pepper.

The sauce must be crushed to a homogeneous mass. To do this, pour it into a blender.

With zucchini you need to do the following: thoroughly rinse them, dry them, then cut them into thin longitudinal plates and add a little salt. Also cut the tomatoes into strips.

Mix the following ingredients: zucchini, capers, sun-dried tomatoes. Also, add tomato oil and 1 teaspoon of caper marinade to the mixture. Leave the resulting salad to infuse for 30 minutes. After the time is up, you can serve baked salmon to the table with cream sauce and zucchini salad.
