You will need
- - 6 x 175 g skinless salmon filet
- - boiled rice and spinach with sesame seeds for serving
- For salsa:
- - 2 peeled mangoes, diced approximately 1 cm
- - 1 finely chopped small red onion
- - 3 tbsp. l chopped cilantro
- - 1 diced green chili pepper
- - 1 lime juice
- - a couple drops of Tabasco sauce
- - salt and ground black pepper

For the sauce, put the mango in a bowl and mix with onion, cilantro, chili, lime juice and tabasco. Salt, pepper and put in the refrigerator.

Prepare a double boiler or take a small pan with a steam nozzle. Pour a little water into it, cover and bring to a boil.

Place the salmon fillet in the double boiler with the outside facing down. Cook for about 10 minutes: the fish should lighten the outside, but remain coral pink inside. Serve fish and salsa with rice and sesame spinach.
