  • - chicken breast fillet - 3-4 pcs.;

  • - olive oil 1 tbsp. l.;

  • - salt to taste;

  • - ground black pepper - a pinch;

  • - hops-suneli;

  • - cling film;

  • For filling:

  • - Basmati rice - 100 grams;

  • - pine nuts - 0.5 cups;

  • - almonds (petals) - 0.5 cups;

  • - raisins - 0.5 cups;

  • - greens to choose from (spinach, spring onions, basil, cilantro);

  • - salt and pepper to taste.

Prepare the filling for chicken rolls. Pour about 0.5 liters of water into a small pot and put on the stove. When the water begins to boil, add salt and gradually pour the basmati rice. Reduce the heat and continue cooking over medium heat. During cooking, do not forget to stir the rice with a spoon. Then we discard the cooked rice grains in a colander so that the water merges. In a heated frying pan, dry the rice a little, transfer to a plate and leave it to cool.

Now prepare the next ingredient for the filling - nuts. Heat the pan and pour in the olive oil. For several minutes, fry over high heat until golden brown pine nuts and almond petals. We make sure that the nuts are not burnt, and vigorously stir them with a wooden spatula.

Grind greens in a blender or with a knife. Pour raisins with boiling water and leave for 10 minutes.

We put in a large bowl chilled nuts, dried rice, raisins, chopped herbs. Add freshly squeezed lemon juice and a little olive oil. Mix everything thoroughly. The filling for rolls is ready!

We lay the chicken breast fillets on a wooden cutting board and twist in a cling film. Gently beat them with a hammer to beat the meat to get an even layer that needs to be salt and pepper.

In the middle of the chicken breast we place the filling and roll up to make a roll. We fix with a toothpick.

Gently fry on all sides each chicken roll in a pan with butter. Put baking paper on a baking sheet and move our rolls. Lubricate with a mixture of olive oil, lemon juice and suneli hops. In a preheated oven to 220 degrees, bake for 20 minutes. Cut the finished roll into portions. We serve to the table a dish with fresh green leaves and / or vegetable salad.
