Crispy Shrimp Bags

This original dish of Japanese cuisine will surely appeal to gourmets and lovers of exotic. To make crispy prawn bags, you need to take:

- 200 g of wheat flour;

- 1 glass of water;

- 200 g of shrimp;

- salt;

- 1 \ 2 cup vegetable oil;

- ½ cup fat cream;

- 1 tbsp. l red caviar.

First of all, prepare the dough. To do this: divide the flour into 2 parts and pour into different bowls. Boil ½ cup of water and add boiling water in one bowl of flour and ice water in another. Knead the dough, and then combine the dough from both bowls, cover with a napkin and leave for 15 minutes.

Shrimp should not be cooked for a long time. From this their meat becomes dry and “rubbery” in taste.

Peel the shrimp off the shell, remove the intestinal vein and cook in salted water for 1-2 minutes. Then discard the shrimp in a colander.

Form their dough tourniquet with a thickness of about 3 centimeters and divide it into 8 pieces the size of a walnut. Roll each in flour and roll into thin circles. Put 2-3 shrimps on each. Then form bags from circles and fasten the edges. Put the prepared bags on a table sprinkled with flour and, having covered with a napkin, leave for 20 minutes.

Warm in a deep pan ¼ cups of vegetable oil, then put the bags on the bottom with “tails” up and pour cold water so that they are covered to the middle. Then cover the pan and simmer for 3 minutes.

After this time, pour the remaining vegetable oil dropwise onto the bags and simmer for another 10 minutes until the water evaporates and the bags become crispy.

Make the sauce. To do this: bring the cream to a boil and cook, stirring, for 5 minutes until thickened. Then remove from heat, add red caviar and mix gently. Place a bowl of warm sauce in the center of a large flat dish, and place prawn bags around.
