Bean Cooking Rules

Green young beans in the form of pods cook pretty quickly. They must first remove the tips and fiber seams. Then they need to be cut into small pieces and boiled in boiling salted water for 15 minutes - thanks to this they will retain their color.

Dry green and white beans should be pre-soaked in cold water for 8-12 hours. Beans that have surfaced in water are best discarded. The soaked product must be cooked from 40 minutes to 1.5 hours, depending on the dishes prepared from it.

To make dry beans cook faster, they should be cooked without salt. This spice, like any other, is best added at the very end.

Green and White Bean Soup

Ingredients:

- ½ cup of white and green dry beans;

- 2.5 liters of water;

- 1 head of onion;

- 1 carrot;

- 150 g of bacon;

- greens;

- salt and black pepper to taste;

- Bay leaf.

Soak the beans in cold water for 12 hours. Then fold their pan, pour clean water and cook under the lid until they become boiled. Meanwhile, cut the bacon into small pieces, fry them in a small amount of vegetable oil. Then put it on a plate and fry finely chopped onions and carrots in the same pan.

When the beans are ready, salt the broth, add vegetables and fried bacon to it. After a couple of minutes, pepper, put a bay leaf and remove from heat. When the soup is a little infused under the lid, pour it on plates, add the greens and serve to the table with crackers.

Green Bean Garnish

Ingredients:

- 500 g of legumes;

- 3 glasses of water;

- 1 teaspoon of salt;

- 1 tbsp. a spoonful of butter;

- 2 boiled eggs;

- 3 tbsp. tablespoons of greens;

- 1 tbsp. a spoon for breadcrumbs;

- spices to taste.

Cut the leguminous beans on both sides and clear of fibrous side seams. Then cut them into 3 parts and slowly lower them into boiling salted water, which must continue to boil. After 15 minutes, drain them and transfer to a stewpan with melted butter. Simmer for another 10 minutes. Then add chopped eggs, greens, and breadcrumbs to the beans. Mix everything well and after a minute remove from heat.
