Remove fins, cut off the head, tail. Then separate the skin, remove the insides and bones.

Cut the fillet into several parts.

Mix all the spices in one container and dip the fillet pieces on both sides in this mixture. Then put them in an enameled pan with a wide bottom. Top up with the remaining mass of a mixture of spices and vegetable oil and leave in the cold for 72 hours.

Then take out the pieces, remove excess salt and spices. No need to be afraid of oversalt, the fish will take only the required amount. When serving, nicely decorate with lettuce, rings of pickled onions or herbs.
