    • fresh yeast (30 g);
    • granulated sugar (2 tbsp.spoons);
    • salt (1 teaspoon);
    • baking margarine or butter (50 g);
    • wheat flour (900 g).
    • Apple Filling:
    • fresh apples (500 g);
    • granulated sugar (1/2 cup).
    • Fresh cabbage filling:
    • cabbage (1 kg);
    • onion (1 piece);
    • egg (3 pieces);
    • milk (1 cup);
    • salt to taste.
    • Cottage cheese filling:
    • cottage cheese (200 g);
    • sour cream (2 tbsp.spoons);
    • egg (2 pieces);
    • granulated sugar (1 tbsp.spoon);
    • flour (1 teaspoon);
    • salt to taste.
    • Beef Filling:
    • boiled beef (500 g);
    • boiled rice (1/2 cup);
    • onion (1 head);
    • salt to taste.

Dough.

Pound yeast with 1 tbsp. a spoonful of granulated sugar. Pour in warm milk and add 400 g of flour. Knead the dough and place in a warm place. Opara should double in volume.

Add salt, remaining flour and melted butter. Beat eggs separately with 1 tbsp. a spoon of sand. Pour them into the dough. Knead the dough with your hands until it becomes smooth and easily sticks off your hands.

Cover the dough with a napkin and let it rise. Thoroughly knead it to remove air bubbles, and leave it to stand still. The dough should fit 2-3 times.

Pour the finished dough onto the table, sprinkled with flour. Roll into a long and thick sausage, cut it into pieces. Try to get the same cut. Mash each piece into a flat cake. Spread the filling in the middle and pinch it.

Lay the pies on a baking sheet so that they do not touch each other, when proofing and baking, the dough will rise. Brush the top of the patties with yolk. Bake pies in a hot oven for 20 to 25 minutes.

Apple filling.

Peel the apples, divide into four parts and remove the seeds. Cut the apples into pieces and put in a saucepan. Add sand and two tablespoons of water. Stew until the apple mass is smooth.

Fresh cabbage filling.

Grind the cabbage and put it in a saucepan. Pour in milk and simmer until tender until the milk has completely evaporated. Cook hard-boiled eggs. Chop the onion and fry in oil. Mix together all the ingredients and salt.

Cottage cheese filling.

Mix cottage cheese with eggs and sugar in a bowl. Add sour cream. If the mass is liquid, then add flour. If desired, put raisins or chopped dried fruits in the filling.

Beef filling.

Pass boiled beef through a meat grinder. Add rice and fried onions. Salt and pepper to taste.
