Late varieties are most suitable for salting watermelons. At the same time, watermelons should be thin-skinned, of the same size, mature, without dents, damage or cracks. The fruit mass should not exceed two kilograms, and the diameter should be no more than fifteen centimeters. It is recommended to salt watermelons in the autumn period, since in the warm season they quickly peroxide.

The first step is to start preparing watermelons for pickling. To do this, wash them thoroughly in cool water, and then prick each fruit with a knitting needle in ten to twelve places. Due to which the fermentation process will accelerate, the fruits are well saturated with brine. Carefully lay the watermelons in a barrel previously scalded with boiling water, and prepare a brine. For every ten liters of water, one kilogram of salt will be required (for small watermelons, 800 grams of salt will be enough). The brine should completely cover the watermelons. After preliminary fermentation, add the brine into the barrel and hammer it with a wooden cork with a linen pad. Store watermelons in a cellar, glacier or basement. In just a couple of weeks, the watermelons will be ready for consumption.

If you want the watermelons to be sweet and sour, then you should use the following salting method. When laying watermelons in barrels, lay them with clean sand (it helps to preserve the shape of the fruit). Then prepare the brine. For every ten liters of water, add 800 grams of table salt and 400 grams of granulated sugar. Spices and spices are not necessary to add to watermelons. Pour in the prepared brine the watermelons sprinkled in the barrel so that it covers the fruits. Put a clean cloth on top, a wooden circle and put oppression on top. Two months later, you need to rearrange the barrel in a cold place for storage. In a month, watermelons will be ready for use.
