Donuts are deep-fried sweet cakes whose taste is familiar to many from childhood. St. Petersburgers especially love them and call them “donuts” in their own way. The legendary pyshechnye appeared in Leningrad back in the 60s. But so far this pastry has not lost its popularity. They are prepared with various types of toppings - with chocolate, custard, jam and so on. And also just sprinkled with powdered sugar. Donuts can be easily made at home. Products prepared in this way are very airy, fragrant, with a delicious crisp.

  • - Milk - 2 cups (500 ml);

  • - Chicken eggs - 2 pcs.;

  • - Creamy margarine - 0.5 packs (125 g);

  • - Dry yeast - 1 sachet;

  • - Sugar - 2 tbsp. l.;

  • - Salt - 1.5 tsp;

  • - Warm water - 100 ml;

  • - Flour - about 500-600 g (depending on the variety, may require less or more);

  • - Vanillin - 0.5 tsp;

  • - Sunflower oil for frying;

  • - Sugar powder for decoration - 50 g;

  • - Jam, jam, berries with sugar, cream for filling - optional;

  • - Deep pan.

Pour milk and water into a small bowl and heat until warm. This is convenient to do in the microwave. Add sugar and dry yeast. Mix everything and place in a warm place, covering with a lid or towel. Leave the workpiece for 15 minutes to come up.

When time passes, melt the creamy margarine in a microwave or in a water bath. Add it to milk with the matching yeast, and also beat the chicken eggs, salt, vanillin into the same bowl and beat everything until smooth with a whisk or fork.

Now pour flour into a large bowl. To get started, take 400 g. Then you can add. Pour the milk-butter mass to the flour and knead the dough. In the end, it should turn out soft, not tight and not bother. Add the flour a little while until the dough gets the right consistency. If kneading in the bowl is uncomfortable, you can do it on the table.

Cover the bowl with the finished dough with a towel and put it in a warm place for 1.5 hours. During this time, it should have time to double. After that, roll out a layer of no more than 1 cm thick from it and cut out medium-sized circles. To do this, you can use a narrow glass or a glass. Leave the workpieces again until they are doubled. Then grease your hands with sunflower oil and shape the donuts in a round shape, making small holes in the middle of them.

After that, take a deep frying pan, warm it thoroughly and pour in so much sunflower oil so that the products are freely immersed in it. When the oil is hot enough, transfer the first batch to the pan and fry on both sides until a golden crust appears.

Put ready-made toasted donuts on a large plate covered with paper towels to drain excess oil. If desired, while the next portion is fried, finished products can be stuffed with any filling, for example, custard or jam, as well as grated berries with sugar. To do this, make an incision with a knife along the light strip, which is formed due to frying, and put in the filling. Or just sprinkle icing sugar on them. Serve hot with coffee and milk (according to the Leningrad tradition).
