Nigiri sushi - this is just the traditional type of sushi - rice bar, covered with filling. As a filling, fish can be used (salmon - sake-nigiri, tuna - maguro-nigiri, eel - unagi-nigiri), shrimp - ebi-nigiri, Japanese omelette - tamago-nigiri. Cut the fish into thin slices with a sharp knife, peel the shrimp, cut along and flatten, cut the omelet into strips. Form a rice ball in your hands, then give it the shape of a small stick, immediately cover it with the prepared filling and wrap it slightly from the edges so that it "hugs" the rice. It is customary to bandage sushi with eel and omelet in the middle of a thin strip of nori.

Guankanmaki - translated from Japanese means "warship." These are rice sticks, covered with filling and wrapped in strips of nori. Indeed, these sushi are like boats. Form a rice bar, take a strip of nori twice as wide as the bar, wrap the rice so that it is at the base, and on top there is a recess for future toppings. And it can be the most diverse: salmon caviar (Ikura-guananmaki), shrimp caviar (ebikko-guankanmaki), tuna cubes and quail egg yolk on top (maguro-uzura-guankanmaki), fish cubes with chopped greens, shrimp salad with avocado and Japanese mayonnaise, crab meat salad and more. It all depends on the imagination of the cook.

In the preparation of vegetarian sushi, only rice and vegetables or mushrooms are involved. For example, shiitake maki (mushrooms), oshinko maki (radish), aspara (asparagus), sashioku (mixed vegetables). Such sushi is prepared in two ways: in the form of rolls (mushrooms and vegetables are cut into thin strips and placed in a pillow of rice on a nori sheet) or in the form of guancanmaki (sushi-boats).

Kavarizushi. But this type of sushi is not served in sushi bars and restaurants. This is a recipe for Japanese mothers and grandmothers, which is easy to prepare, since it does not require dexterity on the rice. Add sesame seeds and finely chopped ginger to the boiled rice, mix. Transfer the mixture to a flat bottom ceramic dish (or a special Japanese sushi-oka bowl). Cut fish (e.g. salmon and eel) into strips. Shiitake mushrooms, cut the asparagus stalk into small slices, take a few teaspoons of boiled corn kernels (canned). Put most of the fish and other ingredients on the rice mixture, mix, put the remaining filling on top.

Do not form rice sticks for too long, otherwise the rice will lose its delicate texture.

Useful advice

To prevent rice from sticking to your hands, dilute rice vinegar in the ratio 3: 1 in water and lower your hands there before taking the rice.

Special molds are sold in stores for forming rice sticks.
