Let's start with the test. Sift the flour on the table, collect it with a slide, and at the top of the slide make a small depression.

Beat one egg, then pour it into the hole you made in the flour. There it is necessary to pour water.

Knead the dough. It doesn't have to be cool. Sprinkle the finished dough with flour, cover with a towel and let stand for about an hour.

Let's start making the filling. The liver should be as clean as possible. To do this, remove the film from it and clean it from the bile ducts. Cut it into small pieces and fry together with a piece of finely chopped onion until the liver is ready.

Pass the chilled liver through a meat grinder. Add salt and pepper to taste. It is also necessary to add finely chopped onions, sautéed in oil, and chopped greens. Mix everything thoroughly.

You should already have dough for dumplings ready. Roll it in a thin layer. Cut round cakes from it with an ordinary glass. These are preparations of future dumplings. On each such preparation, put a teaspoon of minced meat. Lubricate the edges of the dough with a beaten egg and combine.

Dumplings must be boiled in salted boiling water. They will be ready when they surface.
