You will need

  • For biscuit:

  • - flour - 130 g (1 cup);

  • - chicken eggs - 8 pcs.;

  • - sugar - 150 g (slightly less than 1 cup);

  • - butter - 50 g;

  • - cocoa powder - 3 tbsp. l without a hill;

  • - baking powder dough - 1 tbsp. l.;

  • - salt - 1 pinch.

  • For cream:

  • - boiled condensed milk - 150 g;

  • - chicken egg - 1 pc.;

  • - water - 1 tbsp. l.;

  • - butter - 180 g;

  • - cocoa powder - 1 tbsp. l.;

  • - vanillin - on the tip of a knife.

  • For impregnation:

  • - sugar - 5 tbsp. l.;

  • - water - 10 tbsp. l.;

  • - cognac (liquor) - 2 tbsp. l (optional).

  • For glaze (option number 1):

  • - dark chocolate - 90 g (1 bar);

  • - butter - 50 g.

  • For glaze (option number 2):

  • - sugar - 90 g (0.5 cups);

  • - cocoa powder - 2 tbsp. l.;

  • - butter - 50 g;

  • - sour cream - 2 tbsp. l

  • To decorate:

  • - white chocolate - 50 g;

  • - detachable baking dish - diameter 24 cm.

First you need to cook condensed milk. You can buy boiled milk in the store, but it is better to cook it yourself. To do this, put a can of condensed milk in a pan with a barrel, fill it with water so that it completely covers the can. Bring to a boil, and then reduce the temperature to a minimum and cook under a closed lid for about 3 hours. Over time, you need to monitor the amount of water and prevent its boiling. If necessary, boiling water will need to be added.

Bake a chocolate biscuit. First of all, take the chicken eggs, carefully break them and separate the proteins from the yolks. Drain the squirrels in a clean, dry dish and set aside for now. And beat the yolks with half a serving of sugar to a thick foam with a mixer at high speed. The mass should be light yellow. After this, beat the proteins with the remaining sugar until white steady peaks appear.

Now mix all the loose ingredients - flour, baking powder, cocoa powder and salt in a separate bowl. After this, combine the resulting mixture with whipped yolks. Then add the whipped squirrels in parts and knead the airy slightly porous dough. Lastly, melt the butter in a microwave or in a water bath, pour it into the bowl for the dough and mix gently.

Turn on the oven and set the temperature to 180 degrees. While it is heating, grease the baking dish with any oil and pour the dough into it. Submit the form to the oven for 35 minutes. When the cake is ready, remove it and cool at room temperature.

While the dough is preparing, prepare syrup for soaking cakes. To do this, put sugar in a saucepan, pour water, and then put on the stove and bring to a boil. After that, remove the dishes from the stove and put them in a cool place so that the syrup cools completely.

Now let's do the cream. Break the egg and separate the protein from the yolk. Protein is no longer useful, it can be removed. And mix the yolk in a saucepan or ladle with 1 tablespoon of water. Now put the boiled condensed milk and mix thoroughly. After that, put the dishes on the stove and, stirring, cook the mass until thickened. And then put it in a cool place to cool.

Mash butter at room temperature with a fork and beat with a mixer along with vanilla. Add the prepared mass of condensed milk and yolk, as well as cocoa powder. Whisk together again again and put the finished cream in the refrigerator for 20-30 minutes.

While the cream is in the refrigerator, you can cut the cake that has cooled down to this moment. Divide it into 3 equal parts with a wide knife. Soak each of them in syrup. In it, if desired, you can previously add cognac or liquor. Cream finished cakes with cream.

Now you need to make chocolate icing. Melt the dark chocolate in a water bath with a piece of butter. Constantly stirring, bring the mass to uniformity. When it cools down a little, coat it with the sides and top of the cake.

Or you can prepare the icing in another way: for this, put cocoa powder, sugar and sour cream in a ladle and, stirring, bring to a boil. After that, cook for about a minute until thickened. At the end, add the butter and mix.

Now decorate the cake with white chocolate. Melt it in a water bath and place in a cooking syringe or in a plastic bag. Draw on the surface of the cake parallel thin stripes characteristic of Prague. And with the help of a toothpick, you can depict any pattern to your liking.
