Ingredients:

  • Beet tops (enough from a couple of beets of the Mangold variety);
  • 2 cucumbers;
  • Horseradish;
  • Mustard;
  • Chives;
  • Dill.

Garnish ingredients:

  • Crayfish - 6 pcs.;
  • River trout and sterlet 700-800 g each;
  • Potato - 6 pcs.;
  • Pepper;
  • 2 onions;
  • Greens.

Cooking:

  1. Boil 2 liters of a little salted water and pour in it a pre-cut beet tops (slices should be no more than 1 cm). After this, you should wait until the water boils again, and you can remove the pan from the heat. When 3-4 hours pass, the broth will need to be filtered.
  2. While the broth is infused, you need to cook the crayfish. This is done quite simply. 1 tbsp. l salt must be poured into a couple of liters of clean water. There lies a lavrushka, 4 tbsp. l fresh or dried dill and a little pepper peas.
  3. After the water begins to boil, it will be necessary to put crayfish in it. They cook over medium heat for about 6–7 minutes. When the allotted time is over, the crayfish must be removed from the water and cool.
  4. Clean the fish, cut it into large pieces and set to cook. Pour salt and pepper into the saucepan. Send there a lavrushka and a peeled onion cut into 4 parts. It takes about 10 minutes to prepare the fish. Remember to remove the foam. After this time, the fish should be removed and cooled.
  5. Next, you need to boil the potatoes in their skins.
  6. Finely chopped cucumbers and chopped greens should be put in the beetroot broth. In a glass, you need to dilute horseradish and mustard with water and pour everything into a decoction.
  7. Then you can serve this unusually aromatic and mouth-watering dish to the table. Botvini is poured into one plate, and previously peeled potatoes, boiled fish and crayfish are poured into another.

Besides the fact that this dish is very tasty, it is still extremely healthy. The fact is that beet tops contain a large amount of vitamins, as well as other products that are part of this dish.
