In the soul of every person the primitive instincts of a hunter and a fisherman live firmly. Many have made hunting and fishing a hobby. And those who do not rest in this way prefer to quench their instincts, feasting on quail and partridge on a spit or a rich ear, or fish soup. The latter, by the way, is prepared quickly and simply, without requiring any unnecessary efforts.

You will need

    • For 4 servings:
    • Water - 2.5 L
    • Salmon fillet (or soup set of salmon) - 400 g.
    • Potato - 3 pcs.
    • Carrots - 1 pc.
    • Onions - 1 pc.
    • Rice - 1/3 cup
    • Vegetable oil - 3 tbsp.
    • Bay leaf - 1 pc.
    • Greens (cilantro
    • dill) - 1 bunch
    • Salt to taste

Instruction manual

1

Gently divide the fish fillet into small portioned portions, separating the bones if they are caught. Put them in a pot of cold water and put on fire. If you are using a salmon soup set (and this is the head, tail and fins), then rinse everything under running water, tie in gauze and dip in water. You can, of course, not use gauze, but for this you will have to thoroughly clean all parts of the salmon from the scales. And this will increase the time costs and quite laborious. Bring to a boil.

2

Add rice to the boiling broth. You can use regular or steamed - which you prefer: softness and boiled cereals or dense rice grains. Bring to a boil and boil for 5 minutes.

3

Peel the potatoes and cut them into medium-sized cubes or straws. Pour into the pan. Cover and reduce heat slightly.

4

Finely chop the peeled onion, rub the carrots on a coarse grater. Pour the vegetable oil into the pan, put on the fire and add the chopped vegetables. Passer over moderate heat until a light golden hue is obtained. When the vegetables are ready, add them to boiling water with potatoes and cereals.

5

Bring the soup to a boil, let it boil for about 5 minutes and now that all the ingredients have boiled, add salt. After that, drop the bay leaf, and 5 minutes before the fish soup is ready, add finely chopped greens. Mash over low heat. Serve with brown bread croutons and fresh herbs.

Useful advice

Those who, since childhood or military service have maintained a love of pearl barley, can safely replace it with rice. Just remember that this cereal is cooked long enough. Therefore, it is thoroughly washed under running water and then either is poured with boiling water and allowed to stand for 15-20 minutes, or thrown into cold water and then all other products are introduced. If you do not accept mixing vegetables with cereals, then simply increase the number of potatoes in the recipe so that the fish soup does not turn out to be liquid.
