Pour water and melted butter into a flour in a thin stream. Stir the mass with light movements.

Put the dough on a board sprinkled with flour, and knead for about a minute until smooth. Roll a cool elastic dough into a ball, cover with cling film so that it does not wind, and place in the refrigerator for 40 minutes.

Break the chilled butter with a rolling pin into a 1 cm thick layer. Put the dough on a cutting board and make a fairly deep cross-shaped incision on it with a knife. Expand the dough. Roll the edges of the formation in a thin layer, without touching the middle.

Put the prepared flattened butter in the center of the dough and wrap the edges to the center in the form of an envelope so that the butter is completely covered by the dough. If necessary, stretch the edges of the formation with your hands.

Sprinkle the dough with flour and beat the layer a little with a rolling pin. Roll the dough into a rectangle in one direction. In this case, the thickness of the formation should be uniformly the same in 5-8 mm.

Fold a rectangular layer 3 times. Press the edges, beat off with a rolling pin and roll out again, but in a different direction. Again, fold the dough 3 times, wrap in cling film and leave for an hour in the refrigerator.

Make at least four more rolls in the same way, in different directions, at intervals of one hour and refrigerate in the refrigerator between two rolls. Last time, roll the dough to the desired thickness and use for baking.
