Pilaf with raisins and dried apricots is a rather interesting dish, so everyone who wants to please their households with unusual food should definitely cook it. Preparing such a pilaf is easy and simple, the main thing is to have all the necessary ingredients.

You will need

  • - two glasses of round rice;
  • - 200 grams of dried apricots;
  • - three tablespoons of raisins;
  • - sugar and salt (to taste);
  • - a teaspoon of ground black pepper;
  • - 1/2 teaspoon red pepper;
  • - 1/2 teaspoon seasoning zira;
  • - a teaspoon of coriander;
  • - two large carrots;
  • - two onions;
  • - a pinch of ground turmeric;
  • - five glasses of water;
  • - 100 ml of vegetable oil.

Rinse the rice thoroughly in cold water at least three times and make sure that the last water is completely clear when washing. Once the rice is washed, fill it with cold water and leave for 30 minutes.

Peel, rinse and cut the onion into thin half rings.

Peel and wash the carrots, grate the root vegetables on the grater (it is advisable to use a Korean carrot grater, in this case, this vegetable in the finished dish will be more pronounced).

Pour hot raisins and dried apricots with water and let stand for 10 minutes, then rinse thoroughly with dried fruit in cold water.

Pour oil into a casserole or stewpan, put on fire. In a warm oil, put both types of pepper, zira (in other words cumin), ground coriander. Warm the seasoning in oil (it is necessary to ensure that the oil does not boil), after the aroma of spices becomes quite strong, add chopped vegetables to them: first put the onion and fry it for two minutes, then put the carrots and fry until soft.

Drain the rice, put it in the vegetables. Over low heat, evaporate the excess water from the cereal.

Dry the dried apricots and raisins, then cut the dried apricots in random order. Add dried fruits and a pinch of turmeric to the rice (seasoning will give the dish a beautiful color), mix and warm everything over low heat.

Pour five glasses of boiling water into the cauldron, salt and add sugar (to taste), add heat to the maximum. Once the rice has absorbed all the water, cover the pilaf with a lid and let simmer for 30 minutes.

After the specified time, turn off the heat and arrange the dish on plates and serve to the table, seasoned, for example, with natural yogurt of your own preparation.
