It is quite possible to adhere to a healthy diet, while not denying yourself sweets. Here is the recipe for a delicious cake made exclusively from natural products and suitable even for raw foodists.

You will need

  • Half a glass of small oatmeal;

  • Unroasted almonds - 1 cup;

  • Cashew - 100 gr.;

  • Maple syrup (can be replaced with liquid honey) - 2 tablespoons for cake and 2 tsp for the top layer, 1 tbsp. spoon for sauce;

  • Coconut oil - 3 tablespoons for cake and 1/4 cup - for the top layer, 2-3 teaspoons for sauce;

  • Large dates - 15 pieces;

  • Almond milk - half a glass;

  • Cocoa - 1/3 cup (can be replaced with carob, but the taste will be different, in which case you will need to take a little less powder, about 1/4 cup, or more butter);

  • Sea salt - to taste (you can without it).

Soak cashews in cold water for 4-5 hours. Dates also need to be soaked, enough for 1-2 hours. Peel them.

Grind oatmeal in a coffee grinder to the consistency of flour. Separately chop the almonds (more convenient in a blender) until finely chopped. Mix with oatmeal, add maple syrup and coconut oil to the mixture. Put the mixture in a mold, preferably on parchment paper.

To prepare the top layer, mix soaked cashews and dates in a blender, separately mix almond milk, syrup and coconut oil. Combine both mixes and smooth. Spread this layer evenly on top of the cake.

Cooking the sauce. Pour in coconut liquid coconut oil, stirring constantly. Add syrup, also mix. Pour the cake with the resulting syrup and put in the freezer.

When serving the cake should be kept at room temperature for 15-20 minutes. Never defrost in the microwave!

Garnish with almond slices, coconut, prunes.
