  • - butter - 120 g;

  • - flour - 150 g;

  • - white chocolate - 20-30 g;

  • - cream - 200 ml;

  • - cocoa powder - 2 tablespoons;

  • - chocolate-nut paste - 1 tablespoon;

  • - sugar - 1 teaspoon;

  • - vanilla extract - 0.5 teaspoon;

  • - sea salt - 0.5 teaspoon;

  • - water - 1 cup.

Put 100 grams of butter in a free, small-sized pot. Fill it with water. Put this mixture on a very slow fire and heat until the oil is completely dissolved. Pour the dry mixture into the formed mass, consisting of the following ingredients: wheat flour, cocoa powder, sea salt and granulated sugar. Mix everything until smooth.

Allow the resulting mass to cool completely, then mix it with vanilla extract and raw chicken eggs. After each egg addition, thoroughly mix the resulting mixture. The dough for chocolate eclairs is ready.

After covering the baking tray with baking paper, brush the remaining 20 grams of butter. Then, using a tablespoon, lay on the parchment at a sufficiently large distance from each other lumps of dough - eclairs.

In an oven preheated to a temperature of 190 degrees, send the eclairs to bake for one quarter of an hour. After passing this period of time, reduce the oven temperature to 150 degrees and cook baking for another 20 minutes. It is very important not to open the oven when baking eclairs.

Turn dark chocolate into a homogeneous mass, that is, melt with a water bath. With cream, do the following: place them in a separate bowl and whisk until splendid.

After cooling the melted dark chocolate a little, divide it into 2 parts. Combine one of them with chocolate-nut paste. Mix everything as it should. Then enter the whipped cream there. Mix again properly.

After making a small incision on the side of the pastry with a knife, fill it with chocolate and cream mass using a pastry syringe. Pour the eclairs with the remaining half of the dark chocolate. With white chocolate, do the following: chop on a coarse grater, then decorate it with dessert. Chocolate eclairs are ready!
