From the history
There are many versions of the appearance of the name "charlotte". According to one of them, the apple pie was named after Queen Charlotte, the wife of George III. She loved this dish and often ordered it served at the royal table. Another version tells that the "charlotte" came from the English charlyt - as in Britain they called the dish of pastry and baked sweet apples. The third version is romantic. A certain chef, whose name was lost in history to surprise his beloved, was preparing an apple pie for all the most magnificent celebrations and receptions, which he himself called the dish by her name.

French charlotte is prepared according to a rather original recipe. The French love to add custard and a drop or two of flavored liquor, apricots and honey to this pie. One of the good ideas of inventive Frenchmen is adding plums to the dough. The taste that is obtained becomes more pronounced, since plums emphasize the aroma of apples and give the baked dough a pleasant-tasting texture.
It’s not difficult to make “charlotte”, especially since nowadays household appliances came to the aid of cooks. One of the finest modern cooking methods is hot air baking. To do this, take a dozen plums, preferably solid and peel them. Cut the plums in half and remove the seeds. Divide the halves into 4 parts. Take 1 apple, peel, cut, remove the seeds and middle and cut into small slices. To prepare the dough, take 1 cup of sugar, 1 cup of flour, 4 egg whites, ½ teaspoon of salt, 1 teaspoon of slaked vinegar, a pinch of ground cinnamon. Separate the whites from the yolks and beat at medium speed with a mixer. Add sugar, salt, soda and continue whisking. Pour a glass of flour and beat at high speed for 3-4 minutes until the consistency of sour cream. Put the fruit in the dough, mix everything.
